Easy to Make Recipes for Gameday: Salsa Edition

Even though football season is coming to a close, we know you’re probably grocery shopping right now for the Super Bowl! Regardless of who you’re rooting for or if your team is in the playoffs, heck – even if you don’t like football at all, there is one thing we all enjoy on game day and that’s… you guessed it! FOOD! Here are a few simple recipes you can make with what’s already in your kitchen or a few simple ingredients from the store – and our salsa of course! 

Up first, is chips and salsa (or guacamole)! We think you know the drill: 

  1. 1 Bag of your favorite tortilla chips
  2. 1 Jar of Happy Tomato Very Verde Green Salsa
  3. Dig in! 

Next, our friend @chefcynthiaeats loves a yummy Caprese Salad with a twist! We thought we’d share her spin on a classic. 

  1. 1 Jar of Happy Tomato Very Verde Green Salsa
  2. 1 Bunch of fresh basil – gently broken into smaller pieces or diced
  3. 1 Small container of grape tomatoes
  4. Fresh mozzarella – you can buy the balled mozzarella or a full piece and dice it to bite-sized pieces

Veggie trays are a must-have for football because no matter who’s at your party, we always look for something healthy and delicious to snack on. This simple combination is delicious and will have your guests asking, “what is that?”
  1. 1 Small tub of cream cheese
  2. 1 Jar of your favorite Happy Tomato Salsa
  3. 1 Bag of baby carrots
  4. 2 Cucumbers, sliced 
  5. 1 Bunch of Broccoli 
  6. Add as many of your favorite veggies as you’d like!

Quesadillas are a fan favorite and are relatively easy to make, even for larger crowds. Try out this sheet pan party quesadilla this weekend. Choose your favorite fillings. For this recipe we’ll go with the common black bean and corn filling: 
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 clove garlic
  • 1 tomato, diced
  • 1 can of corn
  • 1 can of black beans
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste 
Heat the olive oil in a medium pan over medium heat. Add the onion and garlic and cook until caramelized, about 3 minutes. Add the tomato, corn, black beans, paprika, chili powder, cumin, salt, and pepper and mix thoroughly. Cook until the veggies are tender, about 8 minutes. Transfer to medium bowl, cover with plastic wrap, and refrigerate until ready for use. 

Preheat the oven to 375º F (190ºC) Gather the rest of the ingredients: 
  • 8 Large flour tortillas
  • 3 Cups shredded cheddar cheese
  • 3 Cups shredded Monterey jack cheese
  • Sour cream, for serving
  • Your Favorite Happy Tomato Salsa, for serving
  1. Place 6 tortillas around the sides of the pan so half of the tortilla is hanging over the edge, place two in the middle, covering the exposed pan. 
  2. Sprinkle half of the cheddar cheese and half of the Monterey Jack cheese over the tortillas. 
  3. Scoop the black bean and corn filling onto the tortillas in the upper-left corner of the tray. Carefully spread the mixture so it fills ¼ of the sheet tray. 
  4. Sprinkle the remaining cheese over the fillings. 
  5. Place the remaining 2 tortillas over the cheese in the center of the pan. 
  6. Fold the overhanging tortillas onto the pan so they cover the fillings and touch the center tortillas. 
  7. Place another baking sheet on top. Place another pan to the top so it secures the two cookie trays together. You can use a cast-iron skillet. 
  8. Bake for 20 minutes. Remote the weight and top baking sheet. Bake for 15 more minutes, until the tortillas are golden and crisp. 
  9. Flip the quesadilla onto a cutting board. 
  10. Slice and serve with your favorite Happy Tomato Salsa and sour cream. 

Finally, 5-layer dip! Everyone loves a tasty treat that’s also everything you could love in one bite! This recipe includes seasoned beef, pork or chicken, guacamole, sour cream cheese and your favorite Happy Tomato Salsa. 
  • 8 x 11 casserole dish
  • 1 lb. ground beef, pork, or chicken
  • Taco seasoning
  • Guacamole, homemade or premade to save time
  • Sour cream
  • Cheese
  • Your favorite Happy Tomato Salsa
  1. Layer the ground beef, pork, or chicken on the bottom of the dish. 
  2. Spread the guacamole evenly on top.
  3. Spread the sour cream over the guacamole. 
  4. Sprinkle the shredded cheddar cheese evenly on top
  5. Lastly, add your favorite Happy Tomato Salsa. Be sure to drain any additional water from the salsa so it doesn’t water down the dish. 
  6. Add any additional toppings. i.e. black olives, more cheese, green onions.
